Instructions:

  • Melt 100 g butter with a pinch each of mace, cayenne, and nutmeg.

  • Stir in 200 g cooked brown shrimp.

  • Pack into ramekins, pressing lightly.

  • Cover with more melted butter.

  • Chill until set. Serve with crusty bread.

4. Lemon Posset

Silken, zesty, centuries-old.

Instructions:

  • Heat 600 ml double cream with 150 g caster sugar until sugar dissolves.

  • Bring just to a simmer. Remove from heat.

  • Pour into glasses. Chill at least 4 hours.
